Step by Step Method

Step 1

Preheat oven to 350°. Melt oil and saute carrots until almost tender, then add in green onions until soft.

Step 2

Now, you can either add the cabbage and cauliflower and saute until almost soft, or, while carrots are cooking, steam them a few minutes until crisp tender or so.

Step 3

Meanwhile, in bowl, whisk together the egg, milk, parsley, salt pepper and Parmesan cheese.

Step 4

Add to veggies, in a baking dish or in your cast iron skillet, and mix well. Bake, uncovered, 30-35 minutes.

I used chopped cauliflower the first time around and will play with it next time we have it, and there will be many times more that I make this! It's easy to make which I like too, and my family thought it was great, so it's a win/win situation around here!
