Ingredients

The ingredients are:
  • 1 tablespoon oil (coconut oil)
  • 2 large carrot, chopped
  • 1 bunch green onions, sliced (white and green)
  • 2 cups cabbage, chopped
  • 2 cups cauliflower, chopped (or thinly sliced)
  • 2 large eggs, beaten
  • 1 cup milk (or coconut milk)
  • 2 teaspoons dried parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 tablespoons Parmesan cheese, grated

How to Make

  • Step 1: Preheat oven to 350°. Melt oil and saute carrots until almost tender, then add in green onions until soft.

  • Step 2: Now, you can either add the cabbage and cauliflower and saute until almost soft, or, while carrots are cooking, steam them a few minutes until crisp tender or so.

  • Step 3: Meanwhile, in bowl, whisk together the egg, milk, parsley, salt pepper and Parmesan cheese.

  • Step 4: Add to veggies, in a baking dish or in your cast iron skillet, and mix well. Bake, uncovered, 30-35 minutes.
