Step 1

Sift flour, sugar and salt together. Add the beaten egg yolks, lemon zest, and milk - stir to combine. Fold the stiff egg whites into the flour mixture to make a fluffy batter.

Step 2

Heat the shortening or oil in a deep frying pan. Dip pineapple slices in the batter and fry until golden brown. Drain on paper towels.

Note: You'll likely only use 6 slices of the pineapple, depending on the size of the pineapple and your batter.
