The ingredients are:
  • 1 cup flour
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 2 egg yolks, beaten
  • 2 egg whites, beaten till stiff peaks
  • Zest of 1 lemon
  • 1/2 cup milk
  • Shortening or oil for deep frying
  • 1 (2 lb) pineapple, peeled, cored and cut into 1/4 inch slices

How to Make

  • Step 1: Sift flour, sugar and salt together. Add the beaten egg yolks, lemon zest, and milk - stir to combine. Fold the stiff egg whites into the flour mixture to make a fluffy batter.

  • Step 2: Heat the shortening or oil in a deep frying pan. Dip pineapple slices in the batter and fry until golden brown. Drain on paper towels.

  • Note: You'll likely only use 6 slices of the pineapple, depending on the size of the pineapple and your batter.
