"Recipe slightly adapted from an AR post - I used Burgundy wine instead of cooking wine...and marinated longer for more robust flavor. The deep flavor of the burgundy and the earthy flavor of the portabello compliment each other very well. The marinated mushroom can be used as a steak, in a burger, or even cut and tossed in a mixed greens salad. Cook time listed does not include marinade time!"

Step by Step Method

Step 1

Clean mushrooms with a damp paper cloth. (I removed the stem but left the gills)

Step 2

Mix all marinade ingredients and pour over mushrooms. Marinate in refrigerator for 2 hours.

Step 3

Transfer mushrooms (and marinade) to a baking dish prepared with cooking spray. Bake in a 400 degree oven for 20-25 minutes, turn and continue baking an additional 8-10 minutes.

These mushrooms are a great match with Baked Chicken and Hasselback Potatoes. I had really good results with these mushrooms. Delicious!
