Step 1: Heat oil in a small frypan or saucepan; add the bacon bits and red onion; cook 3 or 4 minutes to crisp up.
Step 2: Add carrot ribbons, brussel sprouts, salt and pepper; cook over medium heat for 6 or 8 minutes until carrot has softened.
Step 3: Just before serving garnish with roasted sunflower seeds.
