Step by Step Method

Step 1

Combine flour, sugar, baking powder and salt in a bowl.

Step 2

Whisk wet ingredients into dry ingredients until just combined. (Small lumps are fine.)

Step 3

Cover batter and let rest overnight in the refrigerator.

Step 4

Heat a large greased griddle or large nonstick skillet over medium heat. Add milk to batter until it reaches desired consistency; the more milk, the thinner and more delicate the pancakes.

Step 5

Working in batches of three pancakes, spoon batter onto griddle or skillet. Cook until surface of pancake is covered with bubbles, 2 to 3 minutes. Flip and cook the other side until golden, 2 to 3 minutes.

Step 6

Drizzle warmed maple syrup over pancakes; serve.

oh wow these are perfectly wonderful fluffy pancakes! I don't make pancakes often cus DH is not fond of them, but once in a while i get a craving for them, done the old English way, with Lemon, Butter and sugar (I use splenda) mmm these were sooo good and now i have some in the freezer to toast up for quick breakfasts! I would certainly make these again, they are really close to perfect!

I cut the recipe into thirds and it was just the perfect amount of pancakes for the two of us. We loved these pancakes. I added in some fresh blueberries I had leftover from making muffins and we had syrup on top. Delicious!
