Step 1

Preheat broiler to high heat.

Step 2

Season the salmon with salt and pepper and sprinkle with the oregano.

Step 3

Broil for 4-5 minutes per side until flakes easily with a fork.

While fish is cooking, heat the oil in a skillet over medium heat.

Add the zucchini and cook until soft.

I made a couple of slight changes to this recipe only because of what I had on hand and this made for a fantastic dinner. I used a lemon herb spice mix instead of the oregano on the fish and I made the zucchini into "noodles" with my spiralizer and cooked as instructed.
