"This is such a simple salad. You use the stems from broccoli that usually get thrown away or use one of those broccoli slaw packets you can buy in the produce section. (Cook time is for the time it needs to sit in the fridge.)"

Step 1

Shred the broccoli stems and carrot using the large side of a grater. Or you can use a food processor. You want it to look similar to shredded cabbage for cole slaw.

Step 2

Place the shredded broccoli and carrots and diced onion into a bowl and add all the ingredients and mix well.

Step 3

Chill covered for a few hours for flavors to meld. Serve.

Quick, easy and delish! I added walnuts and dried cherry halves. So crunchy and refreshing on these hot days of summer. A real winner at our table anytime!

This is so simple, yet so good. Actually, this is how I've made slaw forever, except the lemon juice. Since I was using the slaw as the base to make "crab" slaw from imitation crab meat, the lemon juice was the kicker!!! I'll make this again, over and over. Thanks, Dissie!
