  • 5 to 6 broccoli stems (about 4-5 inches long and shredded)
  • 2 carrots (shredded)
  • 1/2 onion, large (diced small)
  • 1 cup mayonnaise
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons sugar
  • 1 tablespoon lemon juice or more to taste
  • Salt and pepper to taste

How to Make

  • Step 1: Shred the broccoli stems and carrot using the large side of a grater. Or you can use a food processor. You want it to look similar to shredded cabbage for cole slaw.

  • Step 3: Chill covered for a few hours for flavors to meld. Serve.
