Step 1: Shred the broccoli stems and carrot using the large side of a grater. Or you can use a food processor. You want it to look similar to shredded cabbage for cole slaw.
Step 2: Place the shredded broccoli and carrots and diced onion into a bowl and add all the ingredients and mix well.
Step 3: Chill covered for a few hours for flavors to meld. Serve.
