What a great filling breakfast this was though I did make it a little bit differently to the instructions, I used 2 eggs and with a splash of milk and gave the tiny broccoli florets a 30 second zap in the microwave. Put lightly beaten eggs into the frypan in which I had added a little butter and when nearly set I folded over 2 slices of cheese (1 a red American cheddar and a Monterey Jack) then put the broccoli florets on top and then topped with another 2 slices of the cheeses folded) and then folded the half of the egg mix over the cheese and broccoli and put a lid on the pan to assist the melting of the cheese.
