Step by Step Method
Step 1
Combine broth, water and tomatoes in a 3-quart microwave safe casserole.
Step 2
Cover with lid or vented plastic wrap.
Step 3
Microwave on high for 10 minutes or until boiling.
Step 4
Stir in mushrooms, barley, onion, dill, caraway, salt, sugar and pepper.
Step 5
Re-cover and microwave on high 20 minutes, or until barley is tender, adding water as needed.
Step 6
Stir in ham.
Step 7
Microwave 3 minutes more.
Step 8
Top each serving with a dollop of sour cream and chives.
