  • 4 ounces pearl barley (1/2 cup)
  • 1 tablespoon onion, dry, instant, minced
  • 1 1/2 teaspoons dried dill weed
  • 1/2 teaspoon caraway seeds
  • 1/4 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper, to taste
  • 8 ounces ham; cut in bite-size pieces (1 cup)
  • 4 ounces sour cream
  • 1 tablespoon chives, fresh, minced

How to Make

  • Step 1: Combine broth, water and tomatoes in a 3-quart microwave safe casserole.

  • Step 2: Cover with lid or vented plastic wrap.

  • Step 3: Microwave on high for 10 minutes or until boiling.

  • Step 4: Stir in mushrooms, barley, onion, dill, caraway, salt, sugar and pepper.

  • Step 5: Re-cover and microwave on high 20 minutes, or until barley is tender, adding water as needed.

  • Step 6: Stir in ham.

  • Step 7: Microwave 3 minutes more.

  • Step 8: Top each serving with a dollop of sour cream and chives.
