"Grouper is a firm white fish that is perfect for sandwiches because it doesn't fall apart after cooking. Mahi Mahi is also an excellent choice. If you like your blackened fish extra hot, add some cayenne pepper."

Step 1

Preheat the broiler to high with the oven rack 8 inches from the heat.

Step 2

Combine the paprika, pepper, and salt in a small bowl. Add cayenne if you like it hot. Rub the spice mixture evenly over the fillets.

Step 3

Heat oil in a large nonstick skillet over medium-high. Add the fillets to the pan once it is hot, and cook for 3 to 4 minutes on each side.

Step 4

Combine the mayonnaise, relish, mustard, and ketchup in a bowl.

Step 5

Arrange the rolls cut side up on a baking sheet and broil about 1 minute or until toasted.

Step 6

Spread mayonnaise mixture over the cut sides of the rolls. Top the bottom half with lettuce, tomato, fish fillets and the top halves of the roll. Enjoy!
