  • 4 (24 ounces) grouper fish fillets (each fillet 6 ounce)
  • 2 tablespoons oil (canola oil)
  • 1/4 cup mayonnaise
  • 1 1/2 tablespoon sweet pickle relish
  • 1 tablespoon grainy mustard
  • 1 tablespoon ketchup
  • 4 (8 ounces) whole wheat bread buns (hoagie rolls, split, 2 ounce each roll)
  • 4 romaine lettuce leaves
  • 1 tomato, sliced (plum tomato sliced into 8 slices)

How to Make

  • Step 1: Preheat the broiler to high with the oven rack 8 inches from the heat.

  • Step 2: Combine the paprika, pepper, and salt in a small bowl. Add cayenne if you like it hot. Rub the spice mixture evenly over the fillets.

  • Step 3: Heat oil in a large nonstick skillet over medium-high. Add the fillets to the pan once it is hot, and cook for 3 to 4 minutes on each side.

  • Step 4: Combine the mayonnaise, relish, mustard, and ketchup in a bowl.

  • Step 5: Arrange the rolls cut side up on a baking sheet and broil about 1 minute or until toasted.

  • Step 6: Spread mayonnaise mixture over the cut sides of the rolls. Top the bottom half with lettuce, tomato, fish fillets and the top halves of the roll. Enjoy!
