"This is a wonderful sauce over pasta. This comes from a very old family cookbook which has never failed me. The quantity is enough to dress 350 grams / 12oz/ 3/4 pound of pasta."

Step by Step Method
Step 1
Note ~ If using fresh tomatoes ~Peel and roughly chop.
Step 2
Crush the garlic and de seed the chilli.
Step 3
Heat the oil in a deep pan, add the garlic and chilli and cook over a medium heat until golden.
Step 4
Add chopped tomatoes to the pan, season with salt and pepper to taste and cook over a low heat for about 20 minutes or until the sauce has thickened.
Step 5
Just before serving add the drained and chopped capers, halved stone olives and chopped parsley.
Step 6
Leave on the heat for 2 - 3 minutes before serving or using.
