Step 1: Note ~ If using fresh tomatoes ~Peel and roughly chop.
Step 2: Crush the garlic and de seed the chilli.
Step 3: Heat the oil in a deep pan, add the garlic and chilli and cook over a medium heat until golden.
Step 4: Add chopped tomatoes to the pan, season with salt and pepper to taste and cook over a low heat for about 20 minutes or until the sauce has thickened.
Step 5: Just before serving add the drained and chopped capers, halved stone olives and chopped parsley.
Step 6: Leave on the heat for 2 - 3 minutes before serving or using.
