Ingredients

The ingredients are:
  • 2 garlic cloves, crushed
  • 1/2 chilli, red, fresh, de-seeded and chopped
  • 125 milliliters oil (1/4 cup/ 2 fl.oz)
  • 225 grams tomatoes, plum variety ( 8oz or 1/2 pound) see note
  • Salt and pepper to taste
  • 1 tablespoon capers, drained and chopped
  • 100 grams black olives ( 4oz / 1/4 pound ), stoned and halved
  • 1 tablespoon parsley, fresh, chopped

How to Make

  • Step 1: Note ~ If using fresh tomatoes ~Peel and roughly chop.

  • Step 2: Crush the garlic and de seed the chilli.

  • Step 3: Heat the oil in a deep pan, add the garlic and chilli and cook over a medium heat until golden.

  • Step 4: Add chopped tomatoes to the pan, season with salt and pepper to taste and cook over a low heat for about 20 minutes or until the sauce has thickened.

  • Step 5: Just before serving add the drained and chopped capers, halved stone olives and chopped parsley.

  • Step 6: Leave on the heat for 2 - 3 minutes before serving or using.
