"I have been on a search for the best apple cake and finally I found it, this is the best I have ever had,it is delicious. This recipe is a keeper, it tastes like a apple pie! You could sub the oil for applesauce to reduce some of the fat, if you do this then reduce the eggs to only three eggs"

Step by Step Method
Step 1
Preheat oven to 350°F. Spray a 13x9 pan. Sprinkle pecans evenly on bottom of pan.
Step 2
In a large bowl, mix 2 tablespoons of flour with 1/3 cup brown sugar, and 1 tablespoon of cinnamon. Add chopped apples, toss to combine.
Step 3
In another large bowl, mix remaining flour, 2 cups sugar, baking powder, and salt. Add eggs, oi (or apple sauce), butter, apple cider, and vanilla extract. Beat until batter is smooth.
Step 4
Pour half of the batter (about 2 cups) into prepared pan. Top with half of apple mixture. Spoon remaining batter over apples and top with remaining apples.
Step 5
Bake around 1 hour or until a toothpick inserted in the center of the cake comes out clean.
