Step 1: Preheat oven to 350°F. Spray a 13x9 pan. Sprinkle pecans evenly on bottom of pan.
Step 2: In a large bowl, mix 2 tablespoons of flour with 1/3 cup brown sugar, and 1 tablespoon of cinnamon. Add chopped apples, toss to combine.
Step 3: In another large bowl, mix remaining flour, 2 cups sugar, baking powder, and salt. Add eggs, oi (or apple sauce), butter, apple cider, and vanilla extract. Beat until batter is smooth.
Step 4: Pour half of the batter (about 2 cups) into prepared pan. Top with half of apple mixture. Spoon remaining batter over apples and top with remaining apples.
Step 5: Bake around 1 hour or until a toothpick inserted in the center of the cake comes out clean.
