  • 3 ounces pecan nuts (3/4 cup chopped)
  • 3 cups all-purpose flour (divided)
  • 2 cup granulated sugar
  • 1/3 cup light brown sugar (packaged)
  • 2 teaspoon ground cinnamon
  • 1 1/2 pounds apples (4 large apples, chopped, use any baking apple, or 5 small apples)
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 4 large eggs
  • 1/2 cup oil (vegetable oil)
  • 1/2 cup unsalted butter (melted)
  • 1/4 cup apple cider orange juice
  • 2 teaspoon vanilla extract

How to Make

  • Step 1: Preheat oven to 350°F. Spray a 13x9 pan. Sprinkle pecans evenly on bottom of pan.

  • Step 2: In a large bowl, mix 2 tablespoons of flour with 1/3 cup brown sugar, and 1 tablespoon of cinnamon. Add chopped apples, toss to combine.

  • Step 3: In another large bowl, mix remaining flour, 2 cups sugar, baking powder, and salt. Add eggs, oi (or apple sauce), butter, apple cider, and vanilla extract. Beat until batter is smooth.

  • Step 4: Pour half of the batter (about 2 cups) into prepared pan. Top with half of apple mixture. Spoon remaining batter over apples and top with remaining apples.

  • Step 5: Bake around 1 hour or until a toothpick inserted in the center of the cake comes out clean.
