Beet Relish With Feta On Crostini

Step 1

Preheat oven to 375 degrees.

Step 2

Place the beets in a bowl.

Step 3

In a small bowl, whisk the vinegar, remaining oil, garlic, capers, and honey and combine.

Step 4

Pour the dressing on top of the beets and stir to combine.

Step 5

Place crumbles of feta on the each grilled Crostini and add the beet relish.

Step 6

Sprinkle crostini with shallots and chives and serve immediately.


Step 7

Heat a grill pan or broiler.

Step 8

Brush both sides of the bread slices with olive oil.

Step 9

Place on a baking sheet and place under the broiler until dark brown on both sides.

Step 10

Or place on a grill pan until dark brown on both sides.

No special items needed.



What a great combo - the capers, beets, feta and vinegar really marry well in this. I used the refrigerated shrink-wrapped beets from Trader Joe's. One could easily make this a dinner for two. Very yummy!
