The ingredients are:
  • 7 ounces cooked beets (canned beets, 1 cup diced fine)
  • 1/4 teaspoon pepper, as needed
  • 2 tablespoons red wine vinegar
  • 1 garlic clove, minced
  • 1 1/2 teaspoons honey
  • 1 tablespoons capers
  • 4 ounces feta cheese (crumbled)
  • 2 tablespoons diced shallots
  • 2 tablespoons chopped chives
  • 1 (16 ounce) baguette bread (18 inches baguette, cut into slices)
  • 1/8 cup olive oil (extra-virgin olive oil)

How to Make

  • Step 1: Preheat oven to 375 degrees.

  • Step 2: Place the beets in a bowl.

  • Step 3: In a small bowl, whisk the vinegar, remaining oil, garlic, capers, and honey and combine.

  • Step 4: Pour the dressing on top of the beets and stir to combine.

  • Step 5: Place crumbles of feta on the each grilled Crostini and add the beet relish.

  • Step 6: Sprinkle crostini with shallots and chives and serve immediately.

  • FOR CROSTINI

  • Step 7: Heat a grill pan or broiler.

  • Step 8: Brush both sides of the bread slices with olive oil.

  • Step 9: Place on a baking sheet and place under the broiler until dark brown on both sides.

  • Step 10: Or place on a grill pan until dark brown on both sides.
