"Mint is a natural companion to lamb. This is very nice served with New potatoes buttered, carrots and peas. Prep time does not include the 3 hour marinade. "

Step by Step Method

Step 1

Combine all the ingredients except chops in a large zip lock bag, mix well. Add chops

Step 2

Place in fridge for about 3 hours, turn several times to keep coating the chops

Step 3

Heat BBQ to high, have the heat 5 inches from the chops

Step 4

Sear the chops for 2 1/2 minutes each side or until they are nicely browned

Step 5

Turn the heat down to medium low, cook for a further 12 minutes (6 minutes each side) Check your timing to suit how you like your lamb cooked

Step 6

Serve, garnish with sprigs of mint

Delicious marinade for lamb chops! I used fresh mint from my garden. Funny thing is when I was a child, I couldn't eat any kind of lamb without mint jelly. Then when I grew up, I never ate mint jelly with it. However this recipe brings the right amount of mint and sweetness to the lamb. Scrumptious! Made for Alphabet Soup tag.
