Step 1: Combine all the ingredients except chops in a large zip lock bag, mix well. Add chops
Step 2: Place in fridge for about 3 hours, turn several times to keep coating the chops
Step 3: Heat BBQ to high, have the heat 5 inches from the chops
Step 4: Sear the chops for 2 1/2 minutes each side or until they are nicely browned
Step 5: Turn the heat down to medium low, cook for a further 12 minutes (6 minutes each side) Check your timing to suit how you like your lamb cooked
Step 6: Serve, garnish with sprigs of mint
