Ingredients

The ingredients are:
  • 8 sirloin lamb chops, 1 inch thick
  • 4 tablespoons honey
  • 4 tablespoons olive oil
  • 3 large cloves garlic, crushed
  • 1 tablespoon fresh lime juice
  • 1 tablespoon fresh mint, finely chopped
  • Salt and pepper to taste
  • Mint leaves for garnish

How to Make

  • Step 1: Combine all the ingredients except chops in a large zip lock bag, mix well. Add chops

  • Step 2: Place in fridge for about 3 hours, turn several times to keep coating the chops

  • Step 3: Heat BBQ to high, have the heat 5 inches from the chops

  • Step 4: Sear the chops for 2 1/2 minutes each side or until they are nicely browned

  • Step 5: Turn the heat down to medium low, cook for a further 12 minutes (6 minutes each side) Check your timing to suit how you like your lamb cooked

  • Step 6: Serve, garnish with sprigs of mint
