Step 1

Mix together the reserved coriander and mayonnaise.

Step 2

Heat oil. Add potatoes and fry until crisp. Set it on a paper towel to drain the oil.

Step 3

Add Onions, Garlic, Red Pepper, jalapeno, Cumin and Cilantro and saute. Finally add Potatoes and Salt and Pepper; mix well. Add lime juice.

Step 4

Serve Immediately with sauce on side

This is super delicious potato dish. I couldn't stop picking at them and everything about it is wonderful. The sauce is superb and I could have eaten it with a spoon. As mentioned, more garlic could be added and I sure did take that advice. Also added a bit more of the cumin and left out the cayenne pepper because opted to add some of those spicy jalapeno seeds.
