Ingredients

The ingredients are:
  • 4 potatoes (peeled and cubed)
  • 2 tablespoons grated yellow onion
  • 2 garlic cloves (smashed)
  • 2 cayenne peppers (minced, the skinny hot ones)
  • 2 jalapeno peppers ,minced
  • 1/2 cup fresh minced cilantro
  • Cumin, pinch
  • Pepper, pinch
  • 1/4 teaspoon salt
  • 3 teaspoons olive oil (for saute)
  • 1 teaspoon lime juice
  • SAUCE
  • 1/4 cup mayonnaise
  • 1/4 cup fresh chopped cilantro
  • 2 cloves garlic, mashed

How to Make

  • Step 1: Mix together the reserved coriander and mayonnaise.

  • Step 2: Heat oil. Add potatoes and fry until crisp. Set it on a paper towel to drain the oil.

  • Step 3: Add Onions, Garlic, Red Pepper, jalapeno, Cumin and Cilantro and saute. Finally add Potatoes and Salt and Pepper; mix well. Add lime juice.

  • Step 4: Serve Immediately with sauce on side
