Step by Step Method

Step 1

To make Sauce: In a small saucepan, heat oil and add onion, saute till tender, but not brown. Add in salt, mustard, ketchup, apple juice, and molasses. Heat to boiling and set aside

Step 2

Build a slow fire in covered barbecue, or set gas/electric barbecue to slow

Step 3

Arrange coals around sides of firebox and set drip pan in center of firebox under grill and fill with water to keep meat moist

Step 4

Sprinkle 1/3 of the dampened wood chips on coals

Step 5

Place ribs on the grill and close hood

Step 6

Barbecue ribs about 40 minutes on each side, sprinkling coals with some of the remaining chips every 30 minutes or so

Step 7

Baste both sides of ribs with sauce and barbecue uncovered 20 minutes longer, turning and basting occasionally

Step 8

Serve with remaining sauce
