" I enjoy a baked onion and this is a very easy recipe to make. I don't like things too sweet so I don't use too much honey use more if you have a sweet tooth. Also I like to still have some crunch in my onion so if you like well done cook for an additional 15 minutes. Watch that the balsamic/honey doesn't burn. Prep time does not include the 1 hour resting time. This recipe is great served with a roast."

Step by Step Method

Step 1

Mix together the vinegar, honey and taragon.

Step 2

Place the cross cut onions on a dish that has sides high enough to hold any run over vinegar mixture that you will have as you pour it over the onions. As you pour over the vinegar give the onions a slight squeeze to slightly open the layers. Let the onions rest for at least an hour

Step 3

While the onions are resting pre-heat the oven to 375f

Step 4

Place the onions in a lightly oil sprayed oven proof dish

Step 5

Paint the outside of the onion with the vinegar mixture you saved

Step 6

Bake for 20-25 minutes or until the onion is cooked to your liking. If you wish baste the onion once with any remaining vinegar mixture you may have left during baking

These were very tasty, and very easy! I did use a bit more honey (probably another 1/2 tablespoon), but I don't think I needed to. Halfway through the hour, I turned the onions upside down so the cut sides were resting in the balsamic mixture, and then I basted them twice while baking. Amazing!
