Step 1: Mix together the vinegar, honey and taragon.
Step 2: Place the cross cut onions on a dish that has sides high enough to hold any run over vinegar mixture that you will have as you pour it over the onions. As you pour over the vinegar give the onions a slight squeeze to slightly open the layers. Let the onions rest for at least an hour
Step 3: While the onions are resting pre-heat the oven to 375f
Step 4: Place the onions in a lightly oil sprayed oven proof dish
Step 5: Paint the outside of the onion with the vinegar mixture you saved
Step 6: Bake for 20-25 minutes or until the onion is cooked to your liking. If you wish baste the onion once with any remaining vinegar mixture you may have left during baking
