Step by Step Method

Step 1

In a large skillet saute onions, celery and tomatoes in olive oil until tender (about 5-7 minutes). Add tomato juice lemon juice or wine, garlic and bay leaf. Cook over medium high heat for about 5 minutes.

Step 2

Transfer fish fillets in greased baking dish. Season with salt and pepper. Pour onion mixture over fish. Bake at 375 degrees about 20 minutes, until fish is opaque.

Step 3

Transfer fish and tomato mixture to a lage serving platter. Place lemon wedges around the platter. Drizzle top of fish with more olive oil.

I left out the tomato juice, it seemed unnecessary, i did use a little lemon juice. This was a good week night supper easily put together and quick with good flavour.  the timing was a bit off, the fish was a little overdone.

Lovely blend of veggies - the celery gives a bit of crunch. I used red snapper fillets. 20 minutes was just right the fish remained moist and delicious. Next time I make it I may add a teaspoon of chili flakes but it is delicious exactly as made following this recipe Thanks Candida for a lovely dinner 28 Feb 2014 Made again this time witha halibut filet. I did add 1 teaspoon of chili flakes - Loved it!
