Ingredients

The ingredients are:
  • 2 medium yellow onions, chopped
  • 2 medium celery stalks, diced
  • 2 whole tomatoes, chopped
  • 2 tablespoons oil (olive oil, more for drizzling)
  • 1/2 cup tomato juice
  • 2 tablespoons lemon juice (or dry white wine)
  • 3 garlic cloves, crushed
  • 1 bay leaf
  • Salt & pepper
  • 1 to 1 1/2 pounds red snapper fish (fillets, or fish of choice)

How to Make

  • Step 1: In a large skillet saute onions, celery and tomatoes in olive oil until tender (about 5-7 minutes). Add tomato juice lemon juice or wine, garlic and bay leaf. Cook over medium high heat for about 5 minutes.

  • Step 2: Transfer fish fillets in greased baking dish. Season with salt and pepper. Pour onion mixture over fish. Bake at 375 degrees about 20 minutes, until fish is opaque.

  • Step 3: Transfer fish and tomato mixture to a lage serving platter. Place lemon wedges around the platter. Drizzle top of fish with more olive oil.
