"Another fantastic recipe, I found on the Legendairy site. I saw this recipe being made at a show, it looked and smelled so good, and thought that I must try this recipe. I will be making this soon for a platter and hope to serve it with some warm crusty bread. Note: The trick with baking brie is to not be tempted to use a wedge of brie instead. It needs the crusty white mould exterior to hold in the melted creamy interior."

Step by Step Method
Step 1
Preheat oven to 180°C (160°C fan forced).
Step 2
Heat a fry pan over medium-high heat and fry bacon until crispy. Add onions and fry off for approx 5 minutes, stirring often until softened and slightly caramelized. Add maple syrup, vinegar, thyme and mustard seeds and stir until combined. Simmer for 5-10 minutes or until liquid has reduced and mixture is sticky.
Step 3
Place brie on a small piece of baking paper and then place on a baking tray or an ovenproof serving plate. Top evenly with the bacon jam. Bake for 15-20 minutes or until Brie is warmed through.
Step 4
Remove from oven and allow to sit for 5 minutes before serving with slices of toasted bread.
