Ingredients

The ingredients are:
  • 23 grams bacon rashers (2 rashers streaky bacon, cut into strips)
  • 1 brown onion (large onion, thinly sliced)
  • 2 tablespoons maple syrup
  • 1/4 cup balsamic vinegar
  • 1 sprig fresh thyme
  • 1/2 teaspoon yellow mustard seeds
  • 200 to 250g brie (round brie or camembert)

How to Make

  • Step 1: Preheat oven to 180°C (160°C fan forced).

  • Step 2: Heat a fry pan over medium-high heat and fry bacon until crispy. Add onions and fry off for approx 5 minutes, stirring often until softened and slightly caramelized. Add maple syrup, vinegar, thyme and mustard seeds and stir until combined. Simmer for 5-10 minutes or until liquid has reduced and mixture is sticky.

  • Step 3: Place brie on a small piece of baking paper and then place on a baking tray or an ovenproof serving plate. Top evenly with the bacon jam. Bake for 15-20 minutes or until Brie is warmed through.

  • Step 4: Remove from oven and allow to sit for 5 minutes before serving with slices of toasted bread.
