Step by Step Method

Step 1

Heat the oven to 350 degrees Fahrenheit.

Step 2

Place chicken in between 2 pieces of plastic wrap and pound out the meat starting in the middle working your way to the sides.

Step 3

Season with salt and pepper and cover with ham.

Step 4

Top the center of the chicken pieces with even portions of, cheese, onion and garlic, spread out evenly and not all the way to edges as the filling with come out when rolling.

Step 5

Roll the chicken pieces and wrap bacon around every piece, ensuring the chicken is totally covered with bacon, (about 5 to 6 pieces each).

Step 6

Insert toothpicks so bacon does not fall off while cooking.

Step 7

Place individual chicken pieces on top 2 layers of foil and wrap making sure you have a good seal making a foil packet.

Step 8

Place foil packets in a large baking pan and bake for 50 minutes; open the foil pack and carefully drain the juices from each individual packet than return to baking pan leaving foil wrap open and bake for another 15 minutes or until bacon is crisp.

Step 9

Meanwhile make sauce: Coat a saucepan with the oil and warm over medium-low heat.

Step 10

Add the garlic and cook, stirring, until soft. Add the diced tomatoes and basil and season with salt and pepper.

Step 11

Turn the heat up slightly to medium and simmer the sauce for 10 minutes, stirring occasionally.

Step 12

Spoon sauce over meat when ready to serve or set meat rolls atop sauce in serving plate.

I had a friend over for dinner. I cut the recipe in half for the two of us. This is a really delicious company worthy chicken dish that we really enjoyed. I served it with twice baked potatoes and garlic green beans sauteed in garlic and onion. Really delicious meal for whom I have you to thank, so thank you Bea for another one of your special recipes! When I told my husband I was making these he couldn't wait to eat. He is a bacon lover so he was all smiles while it was baking. The chicken smelled so good while baking and the chicken got nice and crispy because I turned on the broiler for a few minutes at the end of cooking time. We loved this with rice and broccoli with cheese sauce. The rice soaked up some of the juices from the sauce and it was delicious!
