"This is recipe a friend passed on to me after I tried it when she had us over for dinner. She found it on a keto site when she was following a keto diet. She loved it so much she continued to make it even when she was off her keto diet and I can see why. It is so sinfully delicious!!"

Step 1

Prepare the chicken thighs by laying them flat on a clean surface. Sprinkle them evenly on the exposed side with salt and pepper.

Step 2

Gently wrap each chicken thigh with bacon. Some larger pieces may require an extra half slice of bacon. Make sure all bacon ends meet on the underside of each thigh.

Step 3

Heat the olive oil in a large skillet on high heat. When the skillet is ready, place in the chicken thighs. Cook on each side for 8-10 minutes or until the chicken is completely cooked through. Set the chicken aside to rest.

Step 4

In a new, small pan, melt the butter over low heat. Gently whisk in the heavy cream. Bring the liquids to a simmer, and whisk until the fats are no longer separated.

Step 5

With the sauce on a low heat and a gentle simmer, whisk in the cheddar cheese in 3-4 additions. Stir the sauce until it’s creamy and smooth. Serve hot over the chicken and enjoy!

What a treat! The chicken came out so nice and juicy and the bacon makes is all so very good. When you think you’re already in Yumsville, then comes the cheesy sauce. Sinful, yes, but so worth it! Delicious! I used the boneless thighs plus peppered bacon and this is so good. My cheese was a medium cheddar -- the sauce was good over the chicken and potatoes. Wonderful dinner! thanks for sharing!

This is so dang good!...I cut the recipe in half and used boneless Pheasant breast in place of the chicken thighs...it worked perfect...they turned out nice and juicy...the cheddar sauce is so rich and creamy...this is going to be made again...it's Pheasant season and I'll have plenty in the freezer...made for "Billboard" tag game...
