Bacon-Cheddar Grits - Plus A Variation

"Found at realsimpledotcom, 1 of my favorite recipe sources. I may have lived in Dallas & moved to Iceland nearly 15 yrs ago, but I'm still a southern girl at heart. It wasn't until I saw the movie MY COUSIN VINNY that I realized not everyone knew what "a grit" was. I'm proud to say that at least some of the people in Iceland do now --- Because I taught them after I found a traveling supply source. I added garlic to the ingredient list & made it optional, btw. Another variation would be to replace the bacon w/shrimp. That's favored more on the US East Coast. I'd use garlic in both recipes & even a bit of Old Bay in the shrimp variation. Feel free to "make it your own" & ENJOY!"

Step by Step Method
Step 1
Cook grits according to package directions.
Step 2
Add the Cheddar, butter & 1/4 teaspoon each of salt & pepper. Stir to combine.
Step 3
Meanwhile, cook the bacon in a lrg skillet over med-high heat (tossing often), until crisp (approx 6-8 min).
Step 4
Top the grits w/the bacon & chives. Serve immediately.
