Step 1: Cook grits according to package directions.
Step 2: Add the Cheddar, butter & 1/4 teaspoon each of salt & pepper. Stir to combine.
Step 3: Meanwhile, cook the bacon in a lrg skillet over med-high heat (tossing often), until crisp (approx 6-8 min).
Step 4: Top the grits w/the bacon & chives. Serve immediately.
