"This recipe came from my sister way back in the 70's. It is full of flavour and a nice change from bread stuffing. Note* Cook time is only for the potatoes....not roasting the chicken. And use a lean bacon...not too fatty."

Derf "RIP" Forever in our Kitchen

We loved the flavour of this stuffing, but found it a wee bit loose. Next time i make it i think i will cut back on the bacan, i believe that is what caused it to be quite a wet stuffing. The texture was lovely before it was cooked, but with the jucices from the chicken and the bacan kind of overwhelmed it. Love the potato base with the apple/bacan flavours. I will make it again.
