Step by Step Method

Step 1

Cook pasta in heavily salted boiling water until al dente, drain, saving 1/2 cup pasta water.

Step 2

Meanwhile, cook bacon in a medium skillet over medium heat until browned.

Step 3

Transfer to paper toweling to drain.

Step 4

Discard all but 1 tablespoon bacon drippings.

Step 5

Add olive oil to the drippings and heat.

Step 6

When hot, add onion and mushrooms and cook, stirring, 4 to 5 minutes until onions are softened, adding more bacon grease if needed.

Step 7

Add garlic, cook a minute.

Step 8

Add wine, deglazing for 1 minute.

Step 9

Add shrimp and cook until almost opaque, 3 minutes.

Step 10

When pasta is done, add to shrimp mixture with pasta water.

Step 11

Cook until tight.

Step 12

Season to taste.

Step 13

Add reserved bacon and gently toss to combine.

Step 14

Top with parsley for garnish.

I also did half the recipe and we both loved it! How could we not - it has the world's best meat - land (bacon) and world's best meat - sea (shrimp)! This is going in my best of 25 file!!!

I did a half recipe and we enjoyed it very much though the DH thinks adding a little cream (1 to tablespoons) would make it even better and decadent but I was more than happy as was.
