Step 1: Cook pasta in heavily salted boiling water until al dente, drain, saving 1/2 cup pasta water.
Step 2: Meanwhile, cook bacon in a medium skillet over medium heat until browned.
Step 3: Transfer to paper toweling to drain.
Step 4: Discard all but 1 tablespoon bacon drippings.
Step 5: Add olive oil to the drippings and heat.
Step 6: When hot, add onion and mushrooms and cook, stirring, 4 to 5 minutes until onions are softened, adding more bacon grease if needed.
Step 7: Add garlic, cook a minute.
Step 8: Add wine, deglazing for 1 minute.
Step 9: Add shrimp and cook until almost opaque, 3 minutes.
Step 10: When pasta is done, add to shrimp mixture with pasta water.
Step 11: Cook until tight.
Step 12: Season to taste.
Step 13: Add reserved bacon and gently toss to combine.
Step 14: Top with parsley for garnish.
