Ingredients

The ingredients are:
  • Pasta*
  • 1 pound dry linguine
  • 6 cups water, boiling
  • 1 teaspoon salt
  • Sauce
  • 6 ounces bacon, diced, (6 slices)
  • 1 tablespoon olive oil
  • 1 cup onion, diced
  • 8 ounces mushrooms, sliced
  • 2 cloves garlic, minced
  • 1/4 cup dry white wine
  • 1 pound uncooked small shrimp, peeled, deveined
  • 1/4 teaspoon white pepper
  • 1/4 teaspoon kosher salt, to taste
  • Garnish
  • 1/4 cup parsley, chopped

How to Make

  • Step 1: Cook pasta in heavily salted boiling water until al dente, drain, saving 1/2 cup pasta water.

  • Step 2: Meanwhile, cook bacon in a medium skillet over medium heat until browned.

  • Step 3: Transfer to paper toweling to drain.

  • Step 4: Discard all but 1 tablespoon bacon drippings.

  • Step 5: Add olive oil to the drippings and heat.

  • Step 6: When hot, add onion and mushrooms and cook, stirring, 4 to 5 minutes until onions are softened, adding more bacon grease if needed.

  • Step 7: Add garlic, cook a minute.

  • Step 8: Add wine, deglazing for 1 minute.

  • Step 9: Add shrimp and cook until almost opaque, 3 minutes.

  • Step 10: When pasta is done, add to shrimp mixture with pasta water.

  • Step 11: Cook until tight.

  • Step 12: Season to taste.

  • Step 13: Add reserved bacon and gently toss to combine.

  • Step 14: Top with parsley for garnish.
