Step by Step Method

Step 1

Combine all the ingredients except the vinegar and oil in a bowl. Mix well but gently, taking care not to mash the avocado

Step 2

Whisk together the vinegar and oil until emulsified, and add just enough of this to the salsa to moisten it. Reserve any leftover vinaigrette to use in other salad dressings.

Ten stars! I made this exactly as written and, even though it says 6 servings, we two managed to eat it all! I served it over shrimp tacos in homemade fried corn tortilla shells. Amazing! When the shrimp was gone, I made a taco with black beans and the tomatillo salsa. Also delish! Then, we couldn't help but heap the remaining salsa over our white rice and also over our black beans. Gone.... This would probably be great scooped up with tortilla chips - guess we'll find out next time! The only change I'll probably make is to sub serranos for the jalapenos. No fault of the recipe, it's just that Florida jalapenos taste like bell peppers - no heat at all! Thanks for sharing!

Daily Inspiration

This is a great salsa with lots of flavor going on. I used the extra half of my avocado just for good measure and otherwise made as directed with one exception - I hope you won't mind as I gave it a few pulses in the food processor. Tasted great; although I strayed from the overall intended texture of the salsa. Loved it and hope you don't mind. : )
