Step by Step Method

Step 1

Place the carrots in a heavy saucepan and barely cover with water.

Step 2

Add the butter and cover. Bring to the boil, reduce the heat, and cook 15 minutes or until still firm but easy to pierce with a fork.

Step 3

Remove the cover and boil down until the liquid has evaporated and the carrots are coated with butter.

Step 4

Watch them carefully or they will burn.

Step 5

Add the chopped herbs and season with salt and pepper.

So yummy! Easy and quick, and works with an elimination diet I am currently on. Only thing I couldn't add was mint, which I probably wouldn't have anyway as I am not a fan of it used in cooking. Thanks for sharing!!

Quick in no time goodness. I followed the recipe as written except that I used half carrots and half parsnips. I loved the quickness of it and even more the flavor. This recipe is perfect to make in a pinch to go alongside anything. I used the mint option sprinkled over the top, but the possibilities are endless as the use other herbs would work out great too. Made for your most recent Football Pool win & for the veggie part of our Christmas Eve dinner w/Siggi's Mom. This recipe is such an easy quick-fix & so flavorful. I used carrot coins & no salt, but did use a generous amt of lemon pepper. We grow fresh mint, but it appeared near death from over-watering & dry mint became my only option. This recipe worked well w/our glazed salmon, baby potatoes & cucumber salad. Thx for sharing it w/us & CONGRATS on another Football Pool win.
