Step by Step Method

Step 1

In a large pot, combine broth, cauliflower, carrots, and onions. Bring to a boil. Reduce heat and simmer 7 to 10 minutes, until vegetables are tender.

Step 2

Puree in a blender or food processor, in batches. Return to pan.

Step 3

Add milk and heat thoroughly, but do not boil.

Step 4

Stir in nutmeg and pepper. Serve.

Easy and very delicious! Since I don't look for low fat but for high fat, I used home made chicken broth and instead of low fat milk I used cream. I'll make this again, it's perfect for autumn! Thanks for sharing! Made for Lighten Up

Love this soup. I used 1/2 a medium cauliflower, 1 1/2 carrots, 1/2 a medium onion, 1 cup of milk and almost 3 cups of vegetable stock, which was what I had on hand. The nutmeg adds a wonderful depth of flavour. The recipe comes together in next to no time. Perfect meal for a chilly, rainy night. Many thanks for posting.

I made this as written except I was naughty and added heavy cream to it! So yummy! My DD kept coming back for 2nds, 3rds, 4ths and after I removed it from my stock pot, she licked the pot! I actually thought it tasted delicious even before I added the cream as just a puree. Made for Recipe tag.
