Step by Step Method

Step 1

Bring 6 cups of heavily salted water to a rolling boil over high heat.

Step 2

Make sure beans are trimmed of stem ends.

Step 3

Dump beans into water, cover with lid and blanch them (boil for about 2 minutes until beans turn bright green and are par-tender.)

Step 4

Drain in a colander and rinse with cold running water until beans are cool.

Step 5

Place beans in large mixing bowl.

Step 6

Meanwhile, heat 2 tablespoons of olive oil in medium skillet.

Step 7

Add sliced sausage and brown on both sides, stirring occasionally.

Step 8

Remove to paper towels to drain.

Step 9

Let cool.

Step 10

Add red pepper, red onion, cucumber and cooled sausage rounds to bowl with beans.

Step 11

Mix together and chill while dressing is made.

Step 12

Combine dressing ingredients together in small bowl and let chill for 30 minutes.

Step 14

Stir once again and taste for seasoning and adjust if necessary.

Step 15

Arrange salad on platter and spoon dressing over, then garnish with egg slices and minced parsley.
