Step 1: Bring 6 cups of heavily salted water to a rolling boil over high heat.
Step 2: Make sure beans are trimmed of stem ends.
Step 3: Dump beans into water, cover with lid and blanch them (boil for about 2 minutes until beans turn bright green and are par-tender.)
Step 4: Drain in a colander and rinse with cold running water until beans are cool.
Step 5: Place beans in large mixing bowl.
Step 6: Meanwhile, heat 2 tablespoons of olive oil in medium skillet.
Step 7: Add sliced sausage and brown on both sides, stirring occasionally.
Step 8: Remove to paper towels to drain.
Step 9: Let cool.
Step 10: Add red pepper, red onion, cucumber and cooled sausage rounds to bowl with beans.
Step 11: Mix together and chill while dressing is made.
Step 12: Dressing:
Step 13: Combine dressing ingredients together in small bowl and let chill for 30 minutes.
Step 14: Stir once again and taste for seasoning and adjust if necessary.
Step 15: Arrange salad on platter and spoon dressing over, then garnish with egg slices and minced parsley.
