Ingredients

The ingredients are:
  • 1 pound fresh green beans
  • 6 cups water, boiling
  • 1 teaspoon salt
  • Sausage
  • 1/2 pound Polska Kielbasa, sliced
  • 2 tablespoons olive oil
  • Salad
  • 1 cucumber, thinly sliced into rounds
  • 1 red bell pepper, thinly sliced lengthwise
  • 1 red onion, slivered
  • Dressing
  • 8 ounces sour cream, (1 cup)
  • 2 tablespoons mayonnaise
  • 1/3 cup white wine vinegar
  • 1 tablespoon sugar
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper, to taste
  • 1 tablespoon chives, minced
  • 1 teaspoon dried dill
  • Garnish
  • 2 eggs, hard boiled, sliced
  • 1 tablespoon parsley, minced

How to Make

  • Step 1: Bring 6 cups of heavily salted water to a rolling boil over high heat.

  • Step 2: Make sure beans are trimmed of stem ends.

  • Step 3: Dump beans into water, cover with lid and blanch them (boil for about 2 minutes until beans turn bright green and are par-tender.)

  • Step 4: Drain in a colander and rinse with cold running water until beans are cool.

  • Step 5: Place beans in large mixing bowl.

  • Step 6: Meanwhile, heat 2 tablespoons of olive oil in medium skillet.

  • Step 7: Add sliced sausage and brown on both sides, stirring occasionally.

  • Step 8: Remove to paper towels to drain.

  • Step 9: Let cool.

  • Step 10: Add red pepper, red onion, cucumber and cooled sausage rounds to bowl with beans.

  • Step 11: Mix together and chill while dressing is made.

  • Step 13: Combine dressing ingredients together in small bowl and let chill for 30 minutes.

  • Step 14: Stir once again and taste for seasoning and adjust if necessary.

  • Step 15: Arrange salad on platter and spoon dressing over, then garnish with egg slices and minced parsley.
