"This Australian café style breakfast is my favorite weekend breaky. Whether we go out or I make it, I love this. This Aussie classic is served in cafés everywhere on the weekends. My husband loves this served with bacon, and I myself love it with cooked mushrooms, but whatever takes your fancy , this dish served with your favorite coffee and a side of the Sunday newspaper ~ makes for a great breaky. Note: Feta cheese can be crumbled over the avocado before the eggs are added, or a small salad or bacon can be served on the side."

Step by Step Method

Step 1

Cut the avocado in half, remove the pit, scoop out the flesh, and place the avocado flesh in a bowl; use a large fork to mash the avocado until you have a rough creamy texture, add the lemon juice, a little salt & pepper to taste. Don’t worry if there are lumps, as texture is great to have.

Step 2

Poach your eggs until they are poached but so they remain soft and runny.

Step 3

Whilst the eggs poach, toast the bread, spread on butter if using and divide the avocado mixture between the two pieces of bread.

Step 4

Place the poached eggs on top of Avocado and sprinkle with salt & pepper.

Step 5

Garnish if using.

Anything with avocado is A-ok in my book and this surpassed my expectation! Wonderful! I subbed cilantro for the parsley and sprinkled in some garlic powder. Like MsPia, I fried the eggs. Happy ANZAC Day!
