Step by Step Method
Step 1
Cut off the tough lower stems of the asparagus and discard.
Step 2
Cut each stalk diagonally into 3 or 4 pieces.
Step 3
Heat the oils together in a wok over high heat.
Step 4
Add the ginger and stir-fry for one minute.
Step 5
Add the asparagus and stir-fry until tender but still crisp, about 4 to 5 minutes.
Step 6
Stir in the cashews and soy sauce.
Step 7
Serve immediately.
