Argentinian Locro Stew Crockpot

"A stew meat dish traditionally served in Argentina it's meat heavy as usual. They use Spanish chorizo, but I am using Andouille sausage as it is more readily available. I would just cut squash in half and steam it and chunk it after it is cooked, season to taste, they use a heavier hand with spices."

Step by Step Method
Step 1
Heat oil in frying pan.
Step 2
Brown meat and add to Pam sprayed crockpot.
Step 3
Brown onion and garlic and add to crockpot.
Step 4
Add seasoning and beef broth to frying pan, swirling around to remove browned bits and add to crockpot.
Step 5
Plop squash on top.
Step 6
Simmer on low for 5 hours until meat is tender.
Step 7
Remove squash.
Step 8
Add undrained canned goods (not Lima beans).
Step 9
Add water if needed.
Step 10
Peel and cube squash and add back to stew.
Step 11
Season to taste.
Step 12
Remove bay leaf simmer 1 hour more.
Step 13
Last 5 minutes add Lima beans.
