"DH was going through Country Women's Association cookbook from a set of 2 that the DD gave me for Christmas and as I have been looking for a good apple slice recipe I knew I had to give this one a go especially as CWA recipes are respected and definitely true and tried. I have made passionfruit icing as optional in the filling ingredients at DH's request as he does not like it. Times and serves are estimated. UPDATE have since made this and had some issues but the DH and I agree it is a good base to start with but need to make changes to suit his tastes more 1 of which is to add less sugar especially to the filling, 2 to dice the apples and add the cinnamon and clove when cooking and forget the water and just use the lemon juice and to omit mashing them making sure the apple is just cooked and also he wants more apple and then to work on the base and top as he is looking for something between and shortbread and a cake and it felt this recipe was to cakey."

Step by Step Method

Step 1

To make the base, cream butter and sugar and then add the egg and then fold in sifted flour.

Step 2

Press half of the mixture into a small slice tine and roll out the second half, ready to cover the filling.

Step 3

To make the filling, peel and core apples and slice and cook in 1/2 cup water and lemon juice until tender.

Step 4

Drain and mash roughly, then add sugar, cloves and cinnamon and while mixture is still hot, spoon over base and then cover with the second layer of pastry and bake in a moderate oven for 25 minutes or until cooked.

Step 5

When cool, top with passionfruit icing (if using) and once fully cook slice into squares.

We enjoyed this dessert. We only used two apples -- but the apples were huge (one granny smith and one red apple). I also used regular white sugar and skipped the icing. I did have to cook mine about 45 minutes and cooked it at 350. I also used a pie dish as I didn't have the type of pan suggested in the recipe. It was a nice dessert which we enjoyed -- ice cream would be wonderful on this and next time I will be sure to have some to top the apple slice with. Thanks for sharing!
